Buckwheat is another high-phytase option for soaking with low-phytase oats, and will ensure all deliciousness from the grain is bio-available. If you are using unstabilised rolled oats, especially those you have rolled yourself, the end result will be smoother and less textured in consistency, but likely more nourishing.

100 g (3½ oz/1 cup) stabilised or freshly rolled (porridge) oats

100 g (3½ oz/½ cup) buckwheat kernels

1 tablespoon whey or choice of acid or dairy-free option

stewed or roasted fruit or your choice of toppings, if desired
